Fred's owner and chef Terry Chandler, left, and head cook Angel Mota accepted the plaque honoring Fred's as the judge's champion in DFW.com INK's Battle of the Burgers. Fred's beat out 31 other terrific Dallas-Fort Worth burger joints in a summerlong NCAA-style bracket competition. About 200 people came to Fred's Tuesday night to celebrate, to win DFW.com prizes and, of course, to scarf down the champion Diablo Burger (at a discount!) Congrats to Fred's.

OPA! Good weather for a busy weekend: THE GREEK FOOD FESTIVAL OF DALLAS


The Greek Food Festival of Dallas is a food festival held annually in Dallas, Texas (USA), featuring tradiational Greek cuisine and Greek culture.

First held in Dallas in 1956 and having celebrated its 50th anniversary in 2006, the Greek Food Festival has grown into an event of national importance, featuring the best of Greek dinners, homemade pastries, wines, Greek music and dances. In addition to this, the spectators have a chance to learn more of Greek history and culture and enjoy cooking demonstrations from Dallas chefs.

Like the majority of Greek festivals, which are organized by the Greek Orthodox Church, recognized as the center of cultural activities of the Greek community, Greek Food Festival of Dallas is also organized by the Holy Trinity Greek Orthodox Church.

Fort Worth, Texas is a city where culture and heritage thrive together. Known for its legendary western roots, this city embraces the arts and is home to some of the most beautifully designed museums in the world, with outstanding collections and a vibrant performing arts scene.

On Saturday, September 26, seven cultural destinations will offer free admission and many of Fort Worth's cultural organizations will offer free performances in and around each destination. We welcome you to enjoy the rich cultural experiences that Fort Worth has to offer during the fourth annual Day in the District, from 10 a.m. to 5 p.m. Free transportation within the Cultural District will be provided by The Fort Worth Transportation Authority (The T).

Day in the District also coincides with National Museum Day, so bring your family out to the celebrated Cultural District and enjoy free admission to a variety of art and cultural exhibitions, family-friendly activities and live performances by some of Fort Worth’s favorite arts groups.

I always give these cats the stink eye after hearing their pitch; but there is a very helpful trade magazine for the Food & Beverage Industry in which I do take stock in and read: Sante.

Time to REGISTER! The Outlaw Chef’s Red River Pig Stickin'


The Outlaw Chef’s Red River Pig Stickin is being hosted by the Dennis Ranch in Jefferson County Oklahoma, and is located about 13 miles East of Ryan Oklahoma. We will be hunting approx. 28,000 acres of the South Oklahoma Cross-Timbers country just on the Oklahoma side of the Red River. The geography can be described as plowed ground up-top, (mostly wheat), giving way to lush, entangled & rugged river bottoms, with miles of river bottom pecan orchards. The majority of the river bottom pecan orchards are suitable for walking and stalking, as well as the plowed ground on the above prairie hills. Hunters will sign up for their pasture of choice providing that the number of hunters has not exceeded the limit of hunters allowed. You may switch pastures as openings permit by changing your name to the proper list. Should it rain, all motor vehicles will be restricted to the camp area. If you are caught in the rain and it appears it won’t last long, wait it out and give the roads a chance to dry before returning to camp.

It’s September and time to get your grape on. Grapevine’s annual outdoor party GrapeFest begins Thursday and runs through Sunday. The 23rd annual GrapeFest has become one of the best events in North Texas to enjoy almost nonstop music, and great food and drink, most notably award-winning wines. There will be a carnival and a midway, arts and crafts booths, a champagne terrace, a draft-beer pavilion, a GrapeStomp and Grapevine winery tasting room tours, among other things. Hours: 10 a.m.-10:30 p.m. Thursday; 10 a.m.-11:30 p.m. Friday; 10 a.m.-11:30 p.m. Saturday; and 11 a.m.-6 p.m. Sunday. Admission is free Thursday and until 5 p.m. Friday. Waco distillery now offering 1st legal Texas whiskey since Prohibition


Now pouring in a bar near you: Texas’ first legal whiskey since Prohibition, made right here in Waco.

Balcones Distilling Co. is now shipping its Hopi blue corn whiskey, called “Baby Blue,” to liquor stores and watering holes in Waco and Texas’ biggest cities.

Joining it on the shelves is a unique 94-proof liquor called Rumble, distilled at Balcones from Texas wildflower honey, Mission figs and raw sugar. Still to come this winter is a Scotch-like malted barley whiskey.

Balcones owner Chip Tate built his distillery system from scratch with his two-person crew in an old warehouse in the shadow of the 17th Street railroad bridge. He started distilling after getting his license late last year. Tate has been a dedicated homebrewer for 18 years and has spent the past two years learning the science of distilling, including an apprenticeship in Scotland.

But Texas is his inspiration and his target market.

“We’re using very traditional methods to distill this stuff,” he said. “But we’re very proud to be a Texas distillery. This is what it makes sense to do. Why shouldn’t there be a whiskey that’s good with barbecue?”

Texans like to say everything in Texas is big. Legal distilleries are anything but.

There are only nine licensed distilleries in the state; the oldest, Tito's Vodka of Austin, is just 11 years old. However, that total will be upped by one if Chip Tate succeeds.

The 33-year-old Waco businessman has applied for state and federal licenses to allow him to produce small-batch whiskey. He owns Tate Technologies in Waco, a technological consultant to higher education agencies.

Although he won't be able to call it Scotch whisky, Tate said his Balcones Distillery would use Scottish techniques and peated malt.

"We're drawing on a lot of old traditions, but this will be a Texas whiskey. We're not apologetic about that," he told the Waco Tribune-Herald. "We're hoping to be the original Texas whiskey. ... I think it will be something that both bourbon and scotch drinkers will like."

Tate, who worked at a distillery in Scotland last summer and is an associate member the International Guild of Brewing and Distilling, said he also plans to sell a liquor called Rumble, similar to rum but contains mission figs, Texas wildflower honey and turbinado sugar.

The TBMBR event was initially organized by cowboy and saddle maker Jeff Gray as a way to honor Tom Butler, of Guthrie, Texas. Butler was an 18-year-old Texas Tech University student when his life was tragically ended in a vehicle accident in February 2006. Butler was one of the shining stars of the cowboy and ranching community, having earned many awards and titles in ranch rodeos and horse competitions, as well as athletic and scholastic activities.

Even though he had yet to reach his 20th birthday, Butler was already a legend in many respects. He was one of those rare individuals that had a memorable, positive impact on everyone he met, young and old. He lived life with infectious passion and purpose, with the wisdom of someone three times his age. At the young age of 17 he prophetically wrote: “We focus so much on what we're waiting for that we miss or forget to appreciate what we have.”

The TBMBR is one small way to keep his legend alive. Make plans now to be in Post, Texas on October 17th, 2009 to be a part of this special event. Donations to the TBMBR scholarship fund are always accepted and appreciated.
